Ingredients:

  • 1 pound (450g) fiddlehead ferns, cleaned and trimmed
  • 2 tablespoons vegetable oil
  • 2-3 cloves garlic, minced
  • 1-2 red or green chili peppers, sliced (adjust to your spice preference)
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar (adjust to taste)
  • Salt and pepper to taste
  • Optional garnishes: chopped cilantro, sliced scallions, or crushed peanuts

Instructions:

  1. Prepare the ferns: Start by cleaning and trimming the fiddlehead ferns. Remove any brown or tough parts and wash them thoroughly under cold running water. Drain and set aside.
  2. Heat the oil: Heat the vegetable oil in a wok or large skillet over medium-high heat.
  3. Add garlic and chili peppers: Add the minced garlic and sliced chili peppers to the hot oil. Stir-fry for about 30 seconds or until they become fragrant. Be cautious not to burn the garlic.
