Irish beef stew is a hearty and comforting dish that is a staple in traditional Irish cuisine. It is typically made with tender beef, potatoes, carrots, onions, and a rich, flavorful broth.

Steps

1
Done

In a large bowl, toss the beef with the flour, salt, and pepper until the beef is coated evenly.

2
Done

In a large Dutch oven or pot, heat the olive oil over medium-high heat. Add the beef in batches and cook until browned on all sides. Remove the beef from the pot and set aside.

3
Done

In the same pot, add the onion and garlic and sauté until softened, about 5 minutes.

4
Done

Pour in the beef broth and Guinness beer, scraping the bottom of the pot to release any browned bits.

5
Done

Add the bay leaves, thyme, and browned beef back into the pot.

6
Done

Bring the stew to a boil, then reduce the heat to low and simmer for 1 hour.

7
Done

After 1 hour, add the chopped carrots and potatoes and continue to simmer for an additional 30 minutes, or until the vegetables are tender.

8
Done

Remove the bay leaves and discard them.
Serve the stew hot, garnished with chopped fresh parsley.
