Steps
Done | In a mixing bowl, sift the all-purpose flour, baking powder, baking soda, and salt together. Set aside. |
Done | In a separate bowl, beat the eggs and granulated sugar together until they become pale and fluffy. |
Done | Add the coconut milk and vegetable oil to the egg mixture. Mix well. |
Done | Divide the mixture into two equal portions in separate bowls. |
Done | In one bowl, add the pandan extract to create the green batter. Mix until the color is evenly distributed. |
Done | In the other bowl, add the vanilla extract to create the white batter. Mix well. |
Done | Line your cupcake molds with cupcake liners. |
Done | Start by adding a spoonful of green batter to each cupcake liner, followed by a spoonful of white batter on top. Continue alternating the colors until the liners are about 2/3 full. |
Done | Prepare your steamer by bringing water to a boil. |
Done | Place the filled cupcake liners in the steamer, leaving some space between them to allow for expansion. You may need to steam them in batches depending on the size of your steamer. |
Done | Steam the cupcakes over medium heat for about 15-20 minutes or until a toothpick inserted into the center comes out clean. |
Done | Once cooked, remove the cupcakes from the steamer and let them cool in the molds for a few minutes. |
Done | Transfer the cupcakes to a wire rack to cool completely and serve. |
