This recipe will help some mothers to provide alternative healthy menu for their beloved kids. Broccoli are known for their beneficial health effects, from promote gut health from its fiber to cancer prevention, hence some people called it as the “supper veggies.” The challenge is to let our kids enjoy this vegetables, some kids hate its texture and taste. Kids sure will love the creamy taste of broccoli cheese soup.

Preheat the oven to 190 degrees C.

Cut the broccoli in half, drizzle with olive oil and sprinkle with black pepper powder and salt. Bake broccoli until begin to crisp and slightly turn brown.

With medium heat, melt the butter on pot. Add chopped onions and cook until its softened, or around 4 minutes.

If you wish to serve the broccoli as puree, then transfer to a blender and puree completely. The other option is to break the broccoli up a bit.

Stir in broccoli, chicken broth and add the nutmeg, salt and black pepper powder to taste. Simmer until broccoli is tender, around 15 to 20 minutes.

Reduce the heat and stir in cheese cubes until melted. Mix in milk and stir.

In a small bowl, stir cornstarch into water until dissolved. Stir into soup and cook until thick, stir frequently and your soup is ready to serve.
