Directions
Greek fried eggplant is one of popular dish especially during the summer time. Easy to prepare and this vegetable also rich in many nutrients and antioxidants as well.
Steps
1 Done | Wash the eggplant and remove the stalks and ends. Cut the eggplant in slices. |
2 Done | Sprinkle the sliced eggplants with salt evenly. Transfer them to a colander over a plate and set aside for about 30 minutes to drain. This step will draw out the bitter juices. |
3 Done | Carefully rinse each piece of the eggplant under cold water, and make sure to remove all the salt. Drain and pat them dry with paper towels. Leave aside. |
4 Done | In a mixing bowl, pour in the soda water, all purpose flour and salt. Slowly stir until mix well. Cover the bowl with plastic wrap and store in the fridge for 20-30 minutes. |
5 Done | Heat the vegetable oil in large skillet or frying pan over high heat. While heating, dip the eggplant in a batter and coat them evenly. |
6 Done | Remove from the heat and transfer them in paper towels-lined plate to absorb the excess oil. Serve. |
