Greek Fried Eggplant – Fried Aubergine Recipe

Greek fried eggplant is one of popular dish especially during the summer time. Easy to prepare and this vegetable also rich in many nutrients and antioxidants as well.

Wash the eggplant and remove the stalks and ends. Cut the eggplant in slices.

Sprinkle the sliced eggplants with salt evenly. Transfer them to a colander over a plate and set aside for about 30 minutes to drain. This step will draw out the bitter juices.

Carefully rinse each piece of the eggplant under cold water, and make sure to remove all the salt. Drain and pat them dry with paper towels. Leave aside.

In a mixing bowl, pour in the soda water, all purpose flour and salt. Slowly stir until mix well. Cover the bowl with plastic wrap and store in the fridge for 20-30 minutes.

Heat the vegetable oil in large skillet or frying pan over high heat. While heating, dip the eggplant in a batter and coat them evenly.
Place them in hot oil and fry for 5 minutes or until golden on both sides.

Remove from the heat and transfer them in paper towels-lined plate to absorb the excess oil. Serve.
