Directions
In Asia we can easily find water spinach at river bank, yet some of fresh market also selling this vegetable. Water spinach literally called kangkung. Based on medical research, water spinach bring some health benefits. One of it is to overcome insomnia.
Steps
1 Done | Cut the water spinach into 2 to 3 inch pieces. Wash and rinse with water, drain well and set aside. |
2 Done | Prepare the other ingredients. Peel the garlic and mince, also peel the shallots and slice into small pieces. |
3 Done | Heat vegetable oil in a skillet or wok over medium high heat. |
4 Done | Add the water spinach into skillet. Let it cook and stir constantly for 3 minutes or until tender. But don't too long to avoid the water spinach become mushy. |
5 Done | Add in red chilies and bird's eyes chilies and season with sugar, salt and oyster sauce. |
6 Done | Add tomato wedges into wok and continue stir fry for another minute. |
