Spicy Water Spinach Stir Fry

In Asia we can easily find water spinach at river bank, yet some of fresh market also selling this vegetable. Water spinach literally called kangkung. Based on medical research, water spinach bring some health benefits. One of it is to overcome insomnia.

Steps

Cut the water spinach into 2 to 3 inch pieces. Wash and rinse with water, drain well and set aside.

Prepare the other ingredients. Peel the garlic and mince, also peel the shallots and slice into small pieces.
Wash the red chilies and bird's eyes chilies and cut them. Remove their seeds if desired.
Wash and rinse tomato, and cut into wedges. Set aside all the prepared ingredients.

Heat vegetable oil in a skillet or wok over medium high heat.
Stir fry minced garlic and sliced shallots until fragrant.

Add the water spinach into skillet. Let it cook and stir constantly for 3 minutes or until tender. But don't too long to avoid the water spinach become mushy.

Add in red chilies and bird's eyes chilies and season with sugar, salt and oyster sauce.
Stir constantly to mix them well. Try to taste and adjust the seasoning to your preference.

Add tomato wedges into wok and continue stir fry for another minute.
Remove from the heat and serve on plate immediately.
