Banana is widely known as one of fruit with lots of advantage for our health. Potassium, fiber, Vitamin C and B6 contents in banana help to eliminate cancer and asthma risk, reduce blood pressure, keep our heart in good condition, lower blood sugar level, also treat diarrhea. With those advantages, Banana Kolak which origin from Indonesia become one of favourite dessert especially during Ramadan for breaking the fast (iftar) due high in calories. Kolak is categorized as compote which mean dessert based on palm sugar, coconut milk and pandan leaf.

Pour water into medium size pot and simmering for 3 to 5 minutes.

Put palm sugar into simmering water piece by piece and stir occasionally to dissolve palm sugar.

Cut banana diagonally and put into the pot, and also put pandan leaf at this point. Bring it to boil or let banana texture getting softer and sugar absorbed.

Add brown sugar (or white sugar if you don't have), salt, vanilla powder and coconut milk. Stir well.

To serve, place 8 - 10 pieces of banana and the sweet soup into a bowl and garnish it with pandan leaf.
