Steps
1 Done | Heat a wok or large skillet over high heat. Add 1 tablespoon of oil and swirl to coat the pan. |
2 Done | Add the shrimp and stir-fry until they turn pink and opaque, about 2-3 minutes. Remove the shrimp from the pan and set aside. |
3 Done | Add another tablespoon of oil to the pan and swirl to coat. |
4 Done | Add the diced onion, minced garlic, and sliced chili pepper to the pan. Stir-fry for 1-2 minutes until the onions start to soften. |
5 Done | Add the Tom Yum paste to the pan and stir-fry for another 1-2 minutes until fragrant. |
6 Done | Add the chilled jasmine rice to the pan and stir-fry for 2-3 minutes until heated through and starting to crisp up. |
7 Done | Add the fish sauce, soy sauce, lime juice, and sugar to the pan. Stir-fry for another minute until everything is well combined. |
8 Done | Add the cooked shrimp back to the pan and stir to combine. |
9 Done | Remove the pan from the heat and stir in the chopped cilantro. |
10 Done | Serve hot with additional cilantro for garnish. |
