When is your last time cook udon noodles by yourself? This recipe is a Japanese style of stir-fried udon noodles (Yaki Udon). Easy and not much ingredients needed. Cook this udon noodles if you’re looking dish to substitute your normal egg noodles dish.

Prepare the vegetables.
Slice the onion and cut the cabbage into small bite pieces.
Then diagonally slice the carrot into 2 inch long strips.

Prepare the mushroom and pork.
Slice the pork into small bite size.
Then discard the tough shiitake mushroom stems, slice thinly the mushroom tops.

Bring the udon noodles to boil according to the package instructions.
Drain and rinse with cold water, set aside.

Heat the vegetable oil in skillet over medium high heat.
Add the pork slices and sauté until almost cooked through, or about 2-3 minutes.
Add the onion and cook until translucent and soft, or about 1 minute.

Then add the carrot and cabbage, stir fry for 30 seconds to 1 minute or until coated with oil.
Add shiitake mushrooms and continue stir fry for 1 minute or until the vegetables is half cooked.

Add the udon noodles, stir to combine it with other ingredients.
Add the seasoning ingredients, soy sauce, cooking sake, mirin and sesame oil. Continue stir fry until all ingredients mix well.

Remove from the heat and transfer the noodles into a plate and serve it.
